This Japanese tea is enhanced by covering the leaves with blankets as they grow, in order to slow growth and pull up more nutrients from the soil. The leaves produce a rich dark green liquor with a full vegetal, slightly toasty flavour.
Use 1 tbsp of tea per 250ml of water. Brew with freshly boiled water cooled for 2 minutes to between 70-80°C. Steep for between 45 seconds and 1.5 minutes, depending on your taste.
