A delicious, light and complex tea. The lovely floral tones are refreshing, and perfect for afternoon drinking. Grown in the Darjeeling district in West Bengal, India, this tea is light and clear with a bright liquor.
The taste of Darjeeling tea is particularly susceptible to impurities so begin by wiping your cup round with a clean damp cloth to remove any such chemicals. Heat cold bottled spring water or filtered tap water to just below the boiling point, about 95°C. Add 2 tsp of tea leaves, or use one tea bag, per 250ml water. Steep using a large tea infuser, or with the leaves directly in the pot, for 3-5 minutes.
